No-bake Key Lime Pie



1 Nutola crust

For Filling:

  1 8oz block cream cheese

  ¾ cup sweetener (Truvia or Lakanto)

  ½ tsp xanthan gum

  ½ cup heavy whipping cream

  3/8  cup key lime juice

  2 tsp gelatin

  green food coloring, optional


  1. Mix gelatin in lime juice, set aside
  2. Combine all of the remaining ingredients in a mixer, and mix on medium-high speed until smooth
  3. Add in the lime juice/gelatin, mix well 1 minute
  4. Pour into Nutola crust, and refrigerate at least 2 hours.
