No-bake Cheesecake with Strawberry


Nutola pie crust


For the filling:

  ¼ warm water

  1 packet gelatin

  2 8oz blocks cream   cheese

  ½ cup sour cream

  ½ cup Lakanto or Truvia

  1 tsp vanilla extract

  1 tsp almond extract,   optional

For the Topping:

  2 cups frozen   strawberries (or   dark cherries,   blueberries)

  ¼ cup water, plus ¼ cup

  ¼ sweetener

  Pinch of salt

  1 packet gelatin


  1. Mix the gelatin in the warm water, set aside.
  2. Add the remaining filling ingredients into a mixer with the blade attachment. Mix on medium high until smooth
  3. Add the gelatin and continue to mix.
  4. Pour into pie shell, and refrigerate while preparing topping
  5. For the topping: place the gelatin in ¼ cup water, mix well
  6. Place the berries, sweetener and salt in a sauce pan. Heat over medium high until berries are soft and liquid is reduced by half.
  7. Stir in gelatin, mix well.
  8. Top cheesecake, and refrigerate for at least 2 hours
