Ingredients
For the filling:
 ¼ warm water
 1 packet gelatin
 2 8oz blocks cream  cheese
 ½ cup sour cream
 ½ cup Lakanto or Truvia
 1 tsp vanilla extract
 1 tsp almond extract,  optional
For the Topping:
 2 cups frozen  strawberries (or  dark cherries,  blueberries)
 ¼ cup water, plus ¼ cup
 ¼ sweetener
 Pinch of salt
 1 packet gelatin
Process
- Mix the gelatin in the warm water, set aside.
- Add the remaining filling ingredients into a mixer with the blade attachment. Mix on medium high until smooth
- Add the gelatin and continue to mix.
- Pour into pie shell, and refrigerate while preparing topping
- For the topping: place the gelatin in ¼ cup water, mix well
- Place the berries, sweetener and salt in a sauce pan. Heat over medium high until berries are soft and liquid is reduced by half.
- Stir in gelatin, mix well.
- Top cheesecake, and refrigerate for at least 2 hours
